FSSAI lists Protease (Fungi), EC No. 3.4 and identifies Aspergillus niger and Aspergillus oryzae as permitted sources under GMP. A subsequent FSSAI amendment added Rhizomucor miehei as a source for fungal protease.
Fungal proteases can include different proteolytic enzyme types, including acidic and neutral proteases, depending on the production organism and commercial grade. Their functional characteristics such as activity, optimum pH, optimum temperature and stability are therefore grade-specific.
